Herbed mayonnaize (see below)
Smoked salmon
Lemon zest
Basil, oregano, dill, parsley
Mayonnaise
Lemon juice
Lemon zest
Kosher salt and freshly grtound pepper
Scallions, green part very thinly sliced
InstructionsCut baguette into thin slices, lightly brush with olive oil, and bake in a 375f oven until edges are crisp, about 4 minutes (don't toats). Let cool.
Put herbs in a food processor and pulse until very well chopped
Add mayonnaise and blend
Drizzle in some olive oil for smoothness
Add kosher salt and pepper
Add a few teaspoons of lemon juice
Blend well
Put herbed mayonnaise on each slive of baguette.
Place a 1x3 slice of salmon on each
Top with a few scallions and some lemon zest
Place a strip of basil on each.
Optional: put some finely diced tomattoe on each.
