Cornbread - Bacon and Jalaopeno

Ingredients
5 strips of bacon
2 - 3 tbsp of minced fresh jalopeno peppers
1 cup flour
1 cup conrmeal
2 - 4 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
2 eggs
1 cup milk
olive oil (if there is less than 1/4 cup of bacon grease

Instructions
Preheat the oven to 425°F.
In a fry pan, cook the bacon
When bacon is done, move to a plate covered with a paper towel to drain. Pour all grease into a cupt but leave a light coating in the pan
Saute the peppers in the pan until soft. Do not brown!
Remove the peppers
In a large bowl, combine the sugar, flour, corn meal, baking powder, and salt and mix well.
In a medium bowl, beat the eggs
Add the milk and mix
Add 1/4 of the bacon grease. If there is less than 1/4 cup, make up the difference with olive oil
Chop the bacon into bits and add the bacon and jalopenos to the milk
Mix the wet and dry ingredients to make a smooth, even batter
Lightly spray an 9x9x2 baking dish with cooking spray and pour the batter into the pan.
Bake for 20 to 25 minutes or until browned slightly on top
