2 1/2 cups all purpose flour
1/2 tsp salt
1/2 cup olive oil
1/2 cup Lukewarm Wate
1 beaten egg (reserve for topping)
Filling . . .
1 lb Frozen Spinach, Thawed
7 oz feta cheese
6 oz shredded parmesan cheese
4 beaten large eggs
InstructionsDough
Combine flour and salt in a bowl.
Add vegatable oil and, using a fork, combine until there is no white flour, only yellow pebbles.
Add another tbsp of oil if necessary.
Add warm water and use the fork to combine until there is a smooth dough. If sticky, add more flour.
Create a single ball of dough and cover.
Filling (preheat oven to 375f
Squeeze all water from spinach in a colander.
Mix spinach with cheese and the 4 eggs, beaten. Combine well.
Divide dough into 12-18 sections.
Flatten each dough section and fill with 1 tsp of filling. Fold dough over and pinch edges.
Brush the tops with the 1 beaten egg and sprinkle a little parmesan on each.
Place on greased baking pan (Pam or olive oil) or cover pan with parchment paper.
Bake for 30 minutes or until only tops are browned. Do not overcook.
You can bake the remaining filling in a greased baking dish or make more dough.
