InstructionsBring roast to room temperature
Set rack for roast on lowest shelf
Preheat oven to 500 degf
Mix pepper and herbes de Provence in a bowl
Season roast liberally with kosher salt
Put roast in pan, fat side up, and put spice mixture all over
Put in oven for around 20 minutes for a 6 pound roast and 5 minutes per additional pound
Turn off oven. DO NOT OPEN DOOR UNTIL ROAST IS DONE!
Let sit in oven for 2 hours
Roast can be sliced immediately
