Ingredients1 tbsp of olive oil
2 tps of butter
3 tbsp of whole milk or half and half
1/2 cup finely chopped red and green peppers
3 scallions, finely chopped
2 garlic cloves, finely chopped
1/2 cup of ham chopped into small pieces
1 cup of baby spinach, trimmed on either side of the stems
1 cup of grated cheddar cheese
10 eggs
Salt, pepper, smoked paprika to taste, and a few pinches of thyme
InstructionsAll amounts are estimates. I measure by feel.
Whisk the eggs in a large mixing bowl
Add the milk and whisk into the eggs
Add the grated cheese and whisk into the the eggs
Preheat the oven to 425 degrees
Heat the olive oil over moderate heat in a large oven proof skillet
Melt the butter in the olive oil
Saute the peppers and scallions until just beginning to soften
Add the garlic and ham and continue to saute for 2 minutes
Add the spinach and saute until it shrinks
Remove the veggies from the heat and let cool for 5 minutes
Pour the eggs into the skillet and mix well so the veggies are evenly distributed
Cook over moderate heat until the edge of the eggs can be moved with a spatula
Place the skillet in the middle rack of the oven for 7-10 minutes. View frequently. Frittata is done when the top is done and jiggling the pan still shows some movement in the middle. When cut the middle should be creamy, not dry
