Ingredients3 tbps unsalted butter
2 - 9oz packages ofr fresh spinach
2 tbsps olive oil
Kosher salt to taste
3/4 cup half and half
Pinch of red pepper flakes
1/4 - 1/3 cup parmesan cheese - preferably Reggiano or Asagio
2 tsp flour
3 large garlic cloves. minced
InstructionsHeat olive oil and 2 tbsp butter over moderate heat
Add garlic cloves and saute for 1 minute - do not overcook
Add spinach and cook covered, until fully wilted, about 3 minutes
Remove spinach and drain in a colander
Heat the remaining tbsp of butter over moderate heat
Stir in the flour and cook to make a roux, about a minute
Add half-and-half and pinch of red pepper. Reduce over moderate heat, about 2-3 minutes
Stir in spinach and parmesan and mix. Parmesan should melt almost immediately
Season to taste with kosher salt, stir and serve
