Ingredients3 almost cooked lobster tails or 2 cooked lobsters, meat removed
12 large shrimp
6 cherrystone clams
6 mussels
1/2 lb chorizo or medium italian sausage
2/3 cup olive oil
1/2 pork cubed
4 chicken breasts, thighs, and legs or 1.5 lbs chicken breast
1 onion
1 green pepper
1/2 cup tomato sauce
3 cups long grain rice
2 pinches of saffron
1 tsp salt
3 garlic cloves pressed, or 1.5 tsp garlic powder
1/4 tsp cracked pepper
1.5 quarts boiling water
1 cup frozen peas
1 fresh tomato, peeled, diced
InstructionsExtract lobster meat and peel and devein shrimp
Scrub clams and mussels
Put sausage in water and bring to boil for 5 minutes. Remove skin
Cut sausage into 1/4 inch pieces and saute until browned. Remove and leave oil.
Heat 1/3 cup olive oil and saute pork until brown. Remove and leave oil.
Add chicken and cook completely (if breasts, 15-20 minutes, if whole, 30+ minutes
Saute lobster meat for a minute or two to cover with oil. Remove.
Add remaining oil and saute onion until tender
Add pepper and saute 5 minutes
Add rice, saffron, salt, pepper, garlic and mix.
Add boiling water, bring to boil and reduce to simmer
Arrange meets and fish on top of rice mixture, along with tomatos, and peas.
Cover and simmer 30 to 45 minites until rice is tender and clams and mussels open
Remove and let sit for 10 minutes
Serve from pan
