Tomatoes with Dijon, Brown Sugar Vinegarette

Ingredients
1/4 cup olive oil
1 tbsp cider vinegar
2 tsp brown sugar
1-1/2 tps dijon mustard
salt and pepper
4 scallions, sliced
Instructions
Slice 3 large native tomatoes and place in a shallow dish
Combine all ingredients except scallions and whisk together with a fork
Add scallions to vinagerette
Pour excess juice from tomatoes. Pour vinegarette over tomatoes and serve
