Ingredients 1/2 pound cooked prawns of shrimp
1/2 cup almonds, chopped, toasted and blanched
I tablespoon grated candied ginger
1/4 teaspoon curry powder
I mashed garlic clove
I tablespoon fresh lemon juice
2 tablespoons finely chopped parsley
2 tablespoons melted butter
4 finely chopped Greek olives
Salt and pepper to taste
Garnish
Whole cooked prawns
Lemon wedges
Greek olives
InstructionsThis mixture can he made with a food chopper but is easier in a food processor or blender. Puree all ingredients in order given and blend into a smooth paste. Form into a loaf and chill for at least 12 hours, overnight is even better.
When ready to serve place loaf on serving dish and garnish with whole prawns, lemon wedges and Greek olives. Serve with your favorite cracker or pita bread.
MAKES ONE LARGE LOAF.
