Cajun Catfish Chez Richard

Ingredients
2 large Catfish filets - about 1.5 lbs.
1 tbsp olive oil
1/2 tsp Tabasco
1/2 tsp Hurtin Habenero (or other very hot pepper sauce)
Salt
Onion powder
Cayenne
Black pepper
Paprika
Thyme
Garlic powder

Instructions
Mix olive oil, Tabasco and Hurtin Habenero.
Brush on the Catfish filets with a pastry brush
Mix spices in a small bowl
Coat Catfish with spices
Refrigerate and let marinate for 4 hours
Remove and grill at high temperature until the Catfish is done, ~12 minutes
If frying, you can optionally coat the catfish with cornmeal before frying
