Venetian Minestrone

Ingredients
1-1/2 lbs lean round steak
3 tbsp olive oil
1 large onion - sliced
1 clove garlic - minced
5 cups beef stock
1 cup red wine
4 tomatoes, peeled, chopped
1 tsp oregano
1/2 tsp thyme
1 tsp salt
1/2 tsp pepper
1/2 cup rice
1/2 cabbage
3 tbsp parsley
grated parmesan cheese

Instructions
Thinly slice steak across grain.
Heat olive oil. Add onion and garlic; saute. Remove with slotted spoon. Add steak and brown well. Add all other ingredients except rice, cabbage, parsley and cheese. Cook 1 hour. Add rice; simmer 20 minutes. Add cabbage; simmer 15 minutes. Add parsley and served with parmesan.
