Ingredients1 can (16 ounces) black beans, rinsed and drained
1 large green bell pepper, diced
1/2 cup peeled, seeded and diced fresh tomato or drained and chopped canned tomato
2 scallions, thinly sliced
1 jalapeno pepper, seeded, deribbed and minced
1 tablespoon chopped fresh coriander
1 tablespoon corn oil
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
Instructions1. Place the beans in a medium bowl. Add the bell pepper, tomato, scallions, jalapeno pepper and coriander. Toss to mix.
2. In a small bowl, combine the corn oil, lime juice, salt and pepper. Pour the dressing over the bean mixture and toss well to coat.
